I love to cook. I especially love to cook when it is an easy recipe and turns out to be something everyone loves. That is the case with this pasta dish. This recipe came from a vintage recipe box I found at a local estate sale....it is a keeper!
Easy Chicken Stuffed Pasta Shells
Ingredients:
1 box (12 oz. box) Jumbo Shells
2 cans (10 oz.) of chicken or 1 pound shredded ( I used the shredded from leftover roasted chicken)
1/2 cup Mayonnaise
1/2 cup finely chopped green onions
1 box prepared chicken stuffing
salt and pepper to taste
1 can (26 oz) (family size) cream of chicken soup
1 can chicken stock
1 cup shredded sharp cheddar cheese
How to:
Partially cook pasta shells in boiling water, drain, run cold water over shells. Preheat oven to 350 degrees and spray a 9X13 pan with cooking spray. Mix chicken, mayonnaise, green onions, prepared stuffing and salt and pepper in a medium size bowl. Fill shells with chicken filling and place on baking dish. Mix cream of chicken soup and chicken broth in seperate bowl and pour over the shells. Sprinkle top with cheddar cheese and bake for 30 minutes or until bubbling.
This was Oh. So. Good. It is supposed to be pretty cold here this weekend. I might just have to make a batch of these for Sunday. Have a great weekend everyone!!

How big is your box of stuffing? I used 3cup stuffing to 1cup broth, and it looked about right, but didn't quite fill the batch.
