Refreshing Pineapple Cake

This is a great cake to make during the hot summer months. My friend Christina gave me the recipe, it is so easy, and so good. I wish I could say something this good took a lot more time to prepare, but I can't. This is one that is super easy and amazing....

What you will need:

Pineapple cake mix - follow instructions on box
1 large can crushed pineapple - drain.

Mix cake mix as instructed on box, in place of water, use the juice from the crushed pineapple,you may need to add a little bit of water to the juice to have enough liquid called for on the box. Don't worry, this is ok and will not make any difference in the taste. Now, mix 3/4 of the crushed pineapple in the cake batter and stir. Reserve the last 1/4 of pineapple for the icing. Bake as directed. Cool on wire rack completely.

Icing

1 large cool whip
1 large block cream cheese
rest of crushed pineapple
1/4 cup powedered sugar

Now, the best part. Mix all ingredients well and spread on cooled cake. Store in refrigerator and serve cool.

This is such a refreshing cake, You can substitute the flavors if you want. You could use a strawberry cake with fresh strawberries. The options are unlimited.
